Proteins are promising raw materials for biocompatible, biodegradable and compostable biopolymers that can be utilized for a variety of food and non-food applications. The work discussed herein comprises the actual state of knowledge of protein-based biopolymers. This include the consolidation of terminologies within the regulatory frame-work and material classifications derived therefrom and a comprehensive study on protein properties, modifications and resulting protein materials. Special emphasis was laid on the thermoplastic processing of proteins by extrusion and the product design of protein-based biopolymers produced therewith. Finally, the physical properties of protein-based biopolymers were discussed and appropriate industrial applications were derived.
