Recently the attention has increased in the use of food additives to prevent diseases, especially lifestyle related diseases such as metabolic syndrome. It is the major free amino acid that is found in many animal tissues including the brain, retina, myocardium, skeletal muscle, liver, platelets, and leukocyte.The physiological functions of taurine include Its works as an inhibitory neurotransmitter and contributed to brain and retinal development , cell membrane stabilization , detoxification, its conjugation with the bile acid and fat metabolism, antioxidant and protecting blood vessels and blood cells from the oxidative damage, and controlling osmoregulation through membranes transport.Despite the progress in taurine research in the last 30 years, the biological and physiological function of taurine still needs more investigation.
