Industrial biotechnology based on the production and application of enzymes has become the national priority due to the fact that enzymes are powerful biocatalysts which can be used in wide applications ranging from new products synthesis to process development, environmental management and services. This is the closest that the technology can be exploited towards the creation of wealth from biotechnology. It has been shown that enzyme based industries can be regarded as one of the important routes for the generation of new bioindustrial processes. Amylases are important in many industrial processes and are one of the most widely used enzymes required for the preparation of fermented foods and now in the light of biotechnology they are considered useful for biopharmaceutical applications. They are useful tools in medicinal and clinical chemistry.
