A spice is a dried seed, fruit, root, bark or vegetative substance primarily used for flavouring, colouring or preserving food. Sometimes a spice is used to hide other flavours. Since time immemorial, spices have played a vital role in world trade, due to their varied properties and applications. India, with its favourable climatic and soil conditions for growing spices and other semi - tropical herbs, is in the fore-front among the spice-producing countries. Amongst, major spices play a major role in human health as aromatic and medicinal value. This book covers production technology, plant protection and post harvest technology of major spices.
