Raisin is one of the important processed product obtained from grapes. Raisins are prepared mainly from seedless grapes. In India both seedless and seeded varieties are used for raisin making. The Seeded raisins called as Manuka are used for their therapeutic value; while seedless raisins known as Kishmish are used at festive occasions both religious and social. However, the complex nature of fruits and its biological properties continues to pose a major challenge for process engineers. Production Technology of Raisins from Grapes provides an engineering perspective on raisin processing. Author received First Class Honours B.Tech.(Agril Engg)from MPKV,Rahuri Maharashtra and M. Tech. (Food Processing Technology) from AAU, ANAND(INDIA).He is having industrial research experience as a process innovation & application design engineer in food and dairy sector.
