Santuccis Mastro da Ballo, das letzte der Tanz-Handbücher aus dem 17. Jahrhundert, die bisher wiederentdeckt worden sind, umfasst 474 Seiten, die in drei Abhandlungen untergliedert sind, und enthält 214 Regeln für Schritte und Haltung, gagliarda-Variationen und zehn Choreographien. Santuccis Regeln bieten nicht nur zahlreiche wichtige Varianten "alter" Schritte, sondern beschreiben erstmalig auch solche, die auf einen neuen Stil deuten; so wird eine Brücke zwischen dem italienischen Stil Carosos und Negris und dem aufkommenden französischen adligen Stil geschlagen. Santuccis Methode, die gagliarda "cinque passi" Variationen zu unterrichten, ist von einer sehr anschaulichen Didaktik geprägt und selbst heutzutage noch von großem Nutzen. Sie enthalten eine historische Übersicht über den Tanz dieser Epoche, Informationen zu Santucci und zum Tanz in Umbrien sowie die Geschichte und Beschreibung des Mastro da Ballo.
